Fool-proof Banana Bread

My daughter just started eating solids and contrary to popular opinion, she loves banana. So as an eager first time parent, I went and bought five bananas in the hope of mashing and freezing them. It turns out babies don’t actually eat that much and one banana goes a long way. I had the other bananas sitting out in the fruit bowl getting sadder each day, until they reached the point where they needed to be turned into banana bread.
This recipe uses the reverse-creaming method, where you combine the dry ingredients first and then the wet ingredients. It's super quick and easy and makes for a lighter crumb. This banana bread is seriously fool-proof, I have played around with it so many times but it is always so forgiving.
There are no bells and whistles here, just good banana bread with a generous spread of butter. You can definitely add in chocolate chips, nuts or fruit but I prefer it without the bits.
